Knife Sharpening Angles by Blade Type: A Practical Reference

Angle charts disagree with each other constantly, and the disagreement makes the number feel more important than it is. The honest version: every angle is a trade-off between keenness and durability, the ranges below are conventions rather than laws, and a consistently held mediocre angle cuts better than a perfect one you can't repeat.

Most double-bevel kitchen knives are sharpened between 10 and 20 degrees per side: Japanese-style knives commonly 10–15°, Western chef's knives 15–20°. Pocket and outdoor knives run steeper — roughly 17–25° per side — trading slicing ability for edge durability. When the maker publishes a recommended angle, use that instead of any chart, and hold whatever angle you choose consistently through the whole progression.

The angle is a trade-off, not a target

A lower angle makes a thinner, keener edge that slices with less force — and folds or chips more easily. A higher angle leaves more steel behind the apex, so the edge survives bones, boards, and abuse at the cost of raw sharpness. There is no correct point on that spectrum; there is only the right compromise for the knife's steel and its job.

Steel decides how far down the spectrum you can go. Hard, fine-grained steels common in Japanese kitchen knives support acute edges; softer stainless found in many Western knives holds up better with a bit more angle behind it. That is why the ranges below differ by blade type at all — they track what the steel and the work will tolerate.

Commonly cited ranges by blade type

These are per-side figures for double-bevel blades, and they are starting points, not rules. Single-bevel Japanese knives such as yanagiba are a separate discipline — the front bevel is sharpened at the angle the blade was ground with and the back stays flat — so for those, follow the blade's own geometry and the maker's guidance.

If the knife came with a factory recommendation, prefer it over every number here. Sharpening at the factory angle also means you remove the least metal, since you are following an existing bevel rather than cutting a new one.

Per side vs inclusive: why charts seem to disagree

Half the contradictions between angle charts are unit confusion. A knife sharpened at 15 degrees per side has a 30-degree inclusive (total) edge angle, and sources routinely quote one without saying which. If a chart's numbers look implausibly steep or shallow, check whether it is counting one bevel or both.

When you record your own angles, pick one convention and keep it. Per-side is the natural unit for freehand whetstone work, since it describes the angle you actually hold against the stone.

Holding the angle without a jig

Consistency is the skill. The widely used check is the marker test: color the bevel with a felt-tip marker, take two light strokes, and look at what rubbed off. Ink gone from the shoulder means you are too shallow; gone from the very edge only, too steep; a clean sweep across the bevel means you are riding the existing angle — which also tells you what angle the knife came with.

Freehand sharpeners keep the angle by feel and reference points — locking the wrist and letting the arms move, watching the gap between spine and stone. Angle guides and jigs remove the variable entirely, at some cost in speed and flexibility. Either way, the angle you can hold for every stroke of every stone beats the theoretically ideal one you hit occasionally.

Questions

Is 15 or 20 degrees per side better for a kitchen knife?

Neither is better in the abstract. 15° per side slices noticeably more easily and suits harder steels and careful use; 20° per side leaves a more durable edge that tolerates harder boards and rougher technique. If the maker recommends an angle, use it — otherwise match the number to the steel and how the knife gets treated.

How do I find the angle my knife already has?

Use the marker test. Ink the bevel, take a light stroke on the stone, and adjust until the ink wears evenly across the whole bevel face — at that point you are holding the knife's existing angle. Following it removes the least metal and keeps the factory geometry intact.

Should the angle change as I move to finer stones?

Keep the same angle through the whole progression — the finer stones are refining the same bevel, not cutting a new one. Some sharpeners add a micro-bevel at the very end by raising the angle slightly for a few light strokes, which toughens the apex, but that is an optional finishing step, not a per-stone adjustment.

Do I need to measure the angle precisely?

No. Freehand sharpening works in ranges, not decimals, and the edge cannot tell 15° from 16°. What it can tell is 15° on one stroke and 22° on the next — inconsistency rounds the apex. Aim for a sensible range for the blade type and put your effort into repeating it.
