Whetstone Grit Progression: Which Stones, in What Order

Grit numbers invite collecting: if 1000 is good, surely 8000 is better, and a twelve-stone ladder is best. In practice most edges are made on one or two stones, and the order matters more than the count. The useful question is not which grits to own but which job each stone in the sequence is doing.

Most kitchen-knife sharpening is covered by a medium stone around 1000 grit, followed by an optional finisher in the 3000–6000 range. Start lower — roughly 220–600 — only to repair chips or reset a very dull bevel, and add 8000-plus polishing grits only when the knife's work benefits from a refined edge. Move to the next stone once the current one has raised an even burr along the full length of the edge.

What each grit band actually does

Grit is a measure of abrasive particle size: lower numbers mean larger particles that remove steel quickly and leave a rough scratch pattern, higher numbers mean finer particles that refine the scratches left by the previous stone. The bands matter more than the exact numbers — a 1000 and a 1200 do essentially the same job.

Numbers are also not perfectly comparable across brands and rating standards, so treat the figure printed on a stone as a position within a band rather than a precise specification. Natural stones and strops often carry no grit rating at all; they sit at the fine end of a progression by convention, not by number.

Common progressions and the jobs they fit

A single stone around 1000 is a complete progression for routine maintenance: it restores a working edge on a knife that has merely dulled. Adding a finisher — 1000 → 3000, or 1000 → 6000 — is the most common two-stone sequence for kitchen knives, trading a few extra minutes for a cleaner, longer-lasting edge. Repair work runs the other direction: something like 140 or 220 to grind past the damage, then 400 → 1000 and upward to rebuild the finish.

Between stones, moderate steps are comfortable. A step that roughly triples the number — 400 to 1000, 1000 to 3000 — erases the previous scratch pattern quickly. Bigger skips such as 1000 straight to 8000 do work, but the fine stone then spends a long time clearing coarse scratches, which is the slowest way to use your most delicate abrasive.

When to move up: the burr is the signal

The reliable cue for leaving a stone is not time or stroke count but the burr — the thin wire of steel that forms along the opposite side of the edge once the bevel you are grinding reaches the apex. When you can feel a consistent burr along the full length of the edge, the stone has done its job and finer grits can take over.

The classic mistake is impatience at the lowest grit. The coarsest stone in the sequence does all the shaping; every stone after it only refines scratches. If the 1000 leaves the edge underdone, no amount of 6000 will fix it — the polish just makes a dull apex shinier.

Why the same progression gives different results

Steel changes the picture: harder steels take fine edges well but grind slowly, softer stainless raises a burr quickly and may not reward polishing past the mid grits. Stones vary too — two 1000s from different makers can cut at noticeably different speeds — and pressure, angle consistency, and how recently the stone was flattened all shift the outcome.

That variability is why sharpeners who improve quickly tend to keep records. Knowing that this knife got a 9-out-of-10 edge from 1000 → 6000 last month, while that one needed a 400 start, turns the next session from guesswork into a repeat of what already worked.

A medium stone around 1000 grit is the standard first purchase. It is coarse enough to restore a dull kitchen knife in one session and fine enough to leave a very usable edge on its own. Can I skip from 1000 straight to 8000?

Is a higher grit always a better edge?
