This is the standard baker's Desired Dough Temperature (DDT) formula: multiply your target dough temperature by 3 (room + flour + friction) or by 4 if a levain or other preferment is part of the dough (room + flour + levain + friction), then subtract every temperature you already know. What's left is the water temperature to mix with. Water = (DDT × factors) − room − flour − friction − levain.

Questions

What is desired dough temperature (DDT)?

The dough temperature you're aiming for right after mixing, because it's the single biggest lever over fermentation speed and, with it, flavor and rise. Most wheat-based yeast breads and sourdoughs target 75–78°F (24–26°C).

Why multiply by 3 or by 4?

The formula assumes final dough temperature is roughly the average of every ingredient's temperature plus the heat mixing adds. Multiplying DDT by the number of factors you're tracking — room, flour, and friction (3), or those plus a levain/preferment (4) — gives a "total temperature factor" you can subtract the known temperatures from, leaving the one you control: water.

What's a friction factor and how do I find mine?

It's the heat your mixing method adds to the dough — near zero for gentle hand folding, a few degrees for vigorous hand kneading, and considerably more from a stand mixer's motor and friction (King Arthur measured roughly 22–24°F / 12–13°C for a 7-quart KitchenAid). To measure your own: mix a batch, take the dough's temperature right after, then solve the same formula backwards — friction factor = (final dough temp × factors) − room − flour − water (− levain if used).

The water temperature comes out negative or oddly high — what does that mean?

It usually means your room or flour is already warmer than needed to hit your DDT, so even ice-cold water can't bring it down (or vice versa in a cold kitchen). Treat that as a sign to adjust DDT slightly, chill your flour, or accept the dough will run a bit off-target rather than chasing an impossible tap temperature.
